Kurly Kale Soup
Now the trick to this soup and in general any soup with leafy goodness in, is to not boil all the goodness out.
You may assume that all the nutrients will be in the water afterwards however some will be lost due to evaporation.
The best way to eat Kale is to steam it, when it's cholesterol lowering properties are at their highest, so I generally add the steamed kale at the whizzing point.
Like wise with the root vegetables, roasting first with your chosen herbs mean that you benefit from more flavour and the vitamins will remain intact.
