I know, I know; it's May, so what's with the wintry soup recipes?! I hear you, but, it's still chilly out there! Last night I was craving a green health injection and we've just had a delivery to the shop of the most beautiful looking organic kurly kale....
1 potatp (diced) - 1 onion (diced) - 2 heads broccoli (into florets) - 200g kale - 1 kallo veg stock cube - salt - pepper - 3 garlic cloves - coconut oil
Heat coconut oil in a BIG pan. Add the onion, when it goes see-through add the potato, keep stirring for a few mins.
Boil the kettle. Add 1 litre of boiling water to the pan with the stock cube, garlic, salt and pepper. Keep stirring. Simmer for 10 mins or until potato is cooked.
When potato is cooked, add the broccoli.Simmer for 4 mins or until the broccoli is bright green, then add the kale and cook for a further 2-3 mins.
Remove from the heat and blend. I put my mixture into the food processor and then back into the big pan and used a hand blender for a bit longer so the soup became really smooth and fine. Add salt and pepper to taste. If you are a fan of stilton, chuck some in now, let it melt and give one more brief whizz with the hand blender.
And Voila! (It tastes amazing cold too)
