I'm gonna let the pictures do the talkin'. 

Minimal cooking, maximum satisfaction. This assembly is vegan unless you add the BBQ sauce seen in the picture below which is vegetarian. You could also make this gluten free by making you're own Vegan Black Pudding or Meat type side. The one I've used is V Pud and it's heavenly. I tried frying it at first but it tended to stick to the pan, so for this dish I roasted it for 15 mins in the oven  (as it was already on anyway cooking the sweet pots) on a little greaseproof paper - worked a treat, and as a bonus no added cooking oil. VioLife Cheddar cheese slices are new to the shop and delicious! They melt too! Although you guys can't see that in the picture - I was consuming it by then. What makes this a bit special is the beanz. I've added finely chopped organic beetroot, chilli and halved cherry tomatoes. 

For 2 people:

1 large sweet potato    |    400g can baked beans

250g cherry tomatoes halved   |    200g beetroot finely diced

couple slices of "cheese"    |    half of a VPud chopped in half

dairy free spread    |    spinach

1 red chilli    |    1 clove garlic

1 tbsp tomato purée    |    sriracha sauce (optional)

1 tbsp smoked paprika    |    salt & pepper

Pre-heat oven to 200 degrees. Slice your sweet potato into discs and place on an oven tray with some coconut oil, salt, pepper, smoked paprika and Rosemary sprigs. Bake for 35-40 minutes, turn halfway through.


Chop 1 clove of garlic and 1 red chilli, fry for 1 minute in some coconut oil in a saucepan. Add the cherry toms, stir often for the next few minutes until they soften. Add the beet and stir for further 5 minutes. Add the beans, tomato purée and sriracha sauce and stir for 3 minutes until the beans are warmed through. Leave to one side and reheat when you're ready to plate up.

Put the VPud in the oven for the last 12-15 mins that the sweet potato is cooking on a little piece of greaseproof paper. When you're a few minutes from serving, in a small pan heat some dairy free spread and the spinach, stir until wilted. 

I stacked in in this order but it's your creation so see what looks good: sweet potato disc, spinach, sweet potato disc, beans, cheese, VPud, cheese, spinach. Enjoy!
